Our flagship culinary knife, Macrum offers the performance, ergonomics and aesthetics of a handmade signature blade at a fraction of the price. Time in the hands of our bladesmiths is the largest driver of cost, so we've streamlined production to focus on the finish.
The final stages of blade grinding and handle finishing are carried out by our bladesmiths before each knife is hand sharpened on a Japanese water stone to meet our rigorous standards. A tool used in the hand should be finished in the hand.
The knife's cutting performance is achieved by optimizing the geometry of the blade behind the edge. Light in hand; Macrum is a pleasure to cut with thanks to its sculpted handle profile that combines Western looks with the feel of a Japanese wa handle.
Specifications:
Steel: AEB-L is a go-to for chef's knives and razors due to its impressive balance of corrosion resistance, fine grain structure, edge stability and hardness.
Blade: The 7.25" stainless steel blade is heat treated to a Rockwell hardness of 62 to facilitate edge retention. A satin finish is applied to conceal scratches and maintain a uniform appearance.
Handle: Richlite Blue Canyon scales and Maple Valley liners are durable and waterproof, making them ideal materials for a kitchen knife. The scales patina gracefully with use like natural indigo dyed denim.
